Split Pea & Ham Soup

Ingredients Amount Variations
water 5cups  
Ham Redibase 4 teaspoons Low Sodium Ham Base
dried green split peas 1 lb.  
cooked ham pieces 2 cups  
celery, diced 2 ribs  
parsley, chopped 3 Tablespoons  
tarragon, dried 1/2 teaspoons  
carrots, diced 1 cup  
onion, diced 1 cups RC Roasted Onion Base
leek, white only, chopped 1  
dry sherry 2 Tablespoons  
pepper to taste  
     
   

Directions:
Place water and Ham Redibase in a soup pot. Bring to a boil and blend base well to make Ham Stock.

Add split peas to stock. Bring to a boil. Lower to a simmer and simmer until peas are soft.

Remove from heat. Allow to cool 10 minutes.

In very small amounts (1 cup at a time), place mixture in blender and puree 2 seconds. When all the soup is pureed, put back into soup pot.

Add celery, parsley, tarragon, carrots, onion and leeks. Simmer 10 minutes until vegetables are tender. Add ham, dry sheery and pepper. Heat through and serve.
