Description: Processed cheddar is the way to go with this.

Ingredients Amount Variations
butter 1/4 lb.  
onion, diced 1 cup  
celery, diced 1/2 cup  
carrots, diced 1/2 cup  
green peppers, diced 1/4 cup  
flour 4 ounces  
Chicken Redibase 2 Tablespoons Vegetable, Turkey, Seafood
water 6 cups  
cheddar cheese, processed 3/4 lb.  
half & half 2 cups  
beer, dark 6 ounces  
salt & pepper to taste  

Directions:
Melt butter in soup pot. Saute onion, celery, carrots and green peppers until limp. Add flour and stir to form roux. Cook one minute.

Slowly add water while stirring. Stir unti smooth and add choice of Base. Bring to a boil and simmer for 5 minutes.

Reduce heat to low and add cheese and cream, mixing well. Heat to a simmer, stirring frequently.

When cheese is completely melted, add beer and heat to serving temperature, stirring frequently.

Season with Salt and pepper to taste.
