Description: A cool soup for a hot summer day

Ingredients Amount Variations
Cucumbers/ peel/seed/chop 3 whole  
water 2 cups  
Chicken Redi-Base 2 teaspoons Turkey or Vegetable Base
sour cream 16 oz.  
garlic powder 1/4 teaspoons  
lemon juice 2 Tablespoons  
white pepper 1/4 teaspoons
     

Directions:
Add Chicken Base to water and bring to a boil. Blend and allow to cool.

In food processor blend cucumber with 1/2 of the Chicken stock until smooth.

In medium bowl, combine cucumber mixture, remaining chicken stock, sour cream, lemon juice, garlic powder, pepper and mix well.

Chill thoroughly. Garnish with fresh dill.

Serve topped with chopped fresh tomato; chopped green onions; chopped green peppers, toasted slivered almonds or toasted croutons.
