Sauce Florentine

Ingredients Amount Variations
butter 3 T. margarine
flour, all purpose 3 t.  
water 2 cup  
Chicken Redi-Base 2 teaspoons Turkey, Veg, Seafood or Mushroom Base
mushrooms, sliced 1/2 cup  
onions, minced 2 T.  
spinach, frozen, thawed 1/2 cup  
lemon juice 1 T.  
pepper to taste    
heavy cream 1/2 cup  

Directions:
Melt butter in sauce pan. Add flour to form roux. Stirring constantly, cook for 2 minutes over low heat. Slowly whisk in water to form a smooth sauce. Add Redi-Base, mushrooms, onions and lemon juice. Cook one minute over medium heat. Add spinach and cook two minutes more. Pepper to taste

Remove from heat and add cream if desired. This sauce is excellent with lighter meats and vegetables. It usually will not hold up to beef or pork.
