Irish American Lamb Stew Category: beef/Soup/stew Get More Recipes

Description: This one is interesting because of the cream finish.

Ingredients Amount Variations
Lamb, cut into 2 inch cubes 2 lb.  
margarine 2 T.  
water 2 1/2 cups  
Lamb Base 2 tsp. RC Beef, Veal, or Pork Base
thyme, dried 1/4 tsp.  
medium potatoes, halves 3  
peas, frozen 2 cups  
mushrooms, sliced 1/4 lb.  
light cream 1 cup  
flour 1/4 cup  
salt & pepper to taste
     

Directions:
Brown lamb in margarine in large Dutch oven or heavy saucepan with tight fitting cover. Add water, Redibase, pepper and thyme. Cover and simmer 45 minutes.

Skim off excess fat.

Add potatoes and onions. Simmer covered, 30 minutes. Add peas and mushrooms. Simmer covered 15 minutes, or until lamb and vegetables are tender.

Blend cream into flour; stir into bubbling stew and boil 1 minutes, stirring constantly.
