Ingredients Amount Variations
water 6 cups  
Beef Redibase 2 T. Pork, Lamb or Veal Base
onion, unpeeled 1 medium RC Roasted Onion Base
star anise 1 piece  
ginger, fresh 5 slices, thin  
Chinese fish sauce 2 1/2 T.  
Chinese vermicelli 1 bundle (2 oz.)  
sirloin, cooked, sliced thin 1/2 lb. leftovers are best
scallions, sliced, green & whites 3  
cilantro, fresh, leaves 2 sprigs  
pepper, ground dash  
chiles, fresh, sliced 1  
     

Directions:
Add Redibase Beef to water and bring to a boil in a soup pot.

Broil onion until flesh is soft, turning often. Peel. Add onion, ginger, anise, and fish sauce to beef broth.

Cook vermicelli in separate pot of water. Drain, chill in cold water and put into individuals serving bowls.

Divide beef into 3 equal portions and place on top of vermicelli in the bowls. Garnish each bowl with scallions and 2 or 3 fresh cilantro springs.

Strain broth. Pour one cup broth over contents of each bowl. Sprinkle with pepper and chiles. Serve immediately.
