| apple cider | 1 cup | |
| water | 1/2 cup | |
| vinegar | 1 T. | |
| Beef Redibase | 1/2 tsp. | RC Beef, Veal, Lamb or Pork Base |
| thyme | 1/2 tsp. | |
| carrots, cut into 1 inch pieces | 2 large | |
| celery, cut into 1 inch pieces | 1 rib | |
| potato, peeled, cubed | 1 large | |
| onion, sliced | 1 medium | |

Directions: In a large soup pot, heat oil and brown beef. Add cider, water, vinegar, thyme and Redibase. Bring to a boil. Reduce heat to a simmer for 1 hour and 45 minutes or until the meat is tender. Add celery, potato and onion; return to a boil. Reduce heat; cover. Cook 20 minutes longer or until vegetables are tender. |
