Puerto Rican Beef Stew Category: beef/Soup/stew Get More Recipes

Description: I still haven't figured out what makes this "Puerto Rican" but it is a good recipe.

Ingredients Amount Variations
Boneless beef bottom round 1 1/2 lb.  
olive oil 3 T.  
garlic, crushed 3 cloves RC Roasted Garlic Base
Beef Redibase 4 tsp. RC Beef, Veal, Lamb or Pork Base
water 4 cups  
onion, chopped 1 large  
parsley, chopped 1 T.  
thyme, dried 1 tsp.  
bay leaves 4 Ground Bay Leaves
flour, all purpose 2 T.  
red wine, dry 2 cups  
potatoes, peeled, quarters 4 large  
carrots, cut into 3/4 inch pieces 3 large  
green beans, trimmed, halves 1/2 lb.  
     

Directions:
Heat oil in heavy large pot or Dutch oven over high heat. Add beef in batches and brown. Using slotted spoon, transfer beef to bowl. Add onion and garlic to pot and saute 5 minutes. Add parsley, thyme, bay leaves and flour. Stir 2 minutes. Gradually mix in water, wine and Redibase. Return beef to pot and bring mixture to boil. Reduce heat to medium-low and simmer uncovered 45 minutes.

Add potatoes and carrots to stew. Simmer until meat and vegetables are tender, stirring occasionally, about 30 minutes. Add green beans and simmer until beans are tender and gravy is slightly thickened, about 10 minutes. Transfer stew to large bowl. Garnish with chopped parsley and serve.
