Cooking Class.....Making Your Own Croutons
During the summer months the birds do just fine on their own. So save that day old bread for another cause--your own croutons. Everyone knows they're great on salad, but they are also the perfect garnish for soups.

Beat the Heat with Soups & Salads
There is an old Spanish saying which goes, "between soup and love, soup is better." Not to be an armchair psychologist, but it probably has something to do with the "feeling satisfied" thing. Soups have been a main stay since the beginning of time. And it's probably a good thing, because up until the 1750's only a few eccentrics were using a fork anyway. Soups at that time were simple. No more than a flavored liquid with a few "sops" of bread or meat floating around in it. The number of sops per serving was a clue as to the host's generosity. By the time we hit the early 1800's it was not unusual for the upper class to start off their dinner parties with no less than four soups and end their meals with salad.

A State of Undress

The success of every salad depends on the freshness of its ingredients and the choice of a well prepared dressing. There is something about an undressed salad that leaves you flat. Well-prepared, properly seasoned dressings should bring together the various ingredients of a salad and also compliment any soup or entree addition to the meal.

Pucker Up...The Making of Vinaigrette

Strictly speaking, vinegar should be made from wine. The word "vinegar" comes from the French vin aigre, meaning "sour wine". Different types of vinegar suits different recipes. As a rule, the choice of vinegar depends upon the origin of the recipe...rice vinegar with Chinese, wine vinegar in Greek and Italian, cider vinegar for we Americans and malt vinegar save the British.

According to the specialists, people who have a tendency to put on weight fall into two categories--Apples or Pears. Apples or the male half of the species gain the weight in the upper body with a beer belly attached.
